As I mentioned in my last blog post I made Alice some cupcakes for her birthday to have after our XC, they were a hit and the recipe has been requested so here we are. It was quite funny because on the way to Bexhill Alice was talking about how she wished she made some coffee and walnut cupcakes or avocado brownies. Beth and I had to keep quite because we both knew that the cupcakes I had made were in the boot waiting haha. Ingredients
For the cake… 250g of self-raising flour 75g of caster sugar 25g of brown sugar (muscovado) 1 ½ tsp. bicarbonate of soda 4tbsp plant based milk 2tsp white wine vinegar (I promise you can’t taste it) 4tbsp of oil (coconut or vegetable) 3-4 tsp of coffee granules (more or less depending on how strong you like it) Boiling water Bag of walnuts For the Icing… *unfortunately I didn’t measure out the icing recipe but I used… Icing sugar Vegan Margarine Coffee granules Boiling water Method
